Early-bird oatmeal.

I become such an early morning person during the school year.  My most productive hours are definitely from 7 a.m. to about 10 a.m. so I get up around 6ish.

The other upside to getting up so early is I usually have time to make whatever breakfast I want to eat.  The past couple of days have been more smoothie/fruit days, but sometimes I fancy it up and make really creamy chia seed oatmeal and top it with tons of fun ingredients like goji berries and brown sugar for me, bananas, brown sugar and peanut butter for Michael.

Then I do about 3 hours of reading.  Whoo hoo…

Rainbow-hued breakfasts.

Michael and I are still juicing for breakfast during the week. It’s nice to feel like I’ve gotten a garden’s worth of veggies before even starting school. Classes also stick better in my brain when I’m fueled with lots of nutrients.

We switch it up sometimes though. M loves my oatmeal so I usually make that on the weekends and occasionally we wake up too late to want something sweet. But overall, juicing has been pretty doable since we live so close to a farmer’s market for quality cheap produce.
