Oatmeal, many ways.

IMG_5775 IMG_5954 IMG_6326 IMG_6474 IMG_7922It’s time to eat a little more healthy.  I am junk and restaurant fooded out and tired of eating so much sugar.  I make oatmeal pretty often as a super filling and versatile breakfast dish.  Michael loves it too.  Probably because we can customize our bowls with whatever we like.

Oatmeal base ideas:  make it with water, soy milk, or almond milk (combine a mixture of quick-cooking steel cut, quick-cooking, and regular oats for extra texture – just make sure to adjust the cooking time to the oat that takes the longest to cook)

Add-ins:  add banana, kabocha squash, or chia seeds to the oats and liquid

Toppings:  peanut or almond butter, poppy seeds, pecans, cinnamon, cranberry sauce or strawberry jam, cottage cheese, avocado, maple syrup – go crazy!

I usually try to get some sort of protein and fat in the toppings because the oatmeal is the carb.  Cheers!

Cookies despite the cough.

IMG_6103 IMG_6109After being prescribed codeine-laced cough syrup this morning for my terrible cough, I baked another batch of oatmeal cookies.  My mom wanted more for her coworkers.  Don’t know how well the syrup is working though, I’m still hacking up a storm.  Poor Michael.  Hopefully he gets more sleep tonight than he did last night.

And hopefully I get over this annoying sickness soon.  My abs can’t take much more of this coughing.  Way too much exercise for them.

xoxo,

Jenn
