Light coconut vegetable stew.

I haven’t cooked a real meal since last week. I’ve been sick and M’s been busy. When he’s not home for dinner, I usually just throw whatever I have in the fridge into a nonstick pan, add an egg, scramble it up and call it dinner. That’s probably why it always looks like barf. But since I’ve been sick, I lost my appetite for four days straight.

As someone who eats basically every three hours on the hour, it was strange to be hungry and yet totally averse to putting something in my mouth.Luckily, I am definitely on my road to recovery. Today was the first day I’ve felt like my old self.

Even though M is not home for dinner (for the third night in a row he’s at Giants game!), I made myself something substantial.

I took a look in the fridge. Ah ha! I saw my new favorite drink ever, the coconut milk from Silk I found on Sunday from Cala Foods. Why not a coconut stew? I use cream of coconut in cans all the time. Coconut milk should just be a lighter version. And indeed it was.

I dumped a ton of veggies into a pan, glugged some coconut milk down, squeezed a lime in and stirred it up. The leftover barley I cooked in the rice cooker on Sunday went in too.

A healthy, easy one-pan dinner in less than half an hour.Cleo wanted some too.

Real meal for me tonight.

I hope the Giants win. M’s been wasting his time at AT&T park for the last two, soon to be three, nights. The Giants should at least win.
