My 2L year at UC Hastings starts on August 20th. Not much time between now and then to fit in all the doctor/dentist/eye appointments necessary and get all the little errands done while also interviewing on campus for a summer associate position next year. Plus, I’m 95% sure I’m heading to Chicago next week for a mini-vacation before school.
I have really missed cooking for myself though. It’s nice to be back in my own kitchen. Summer produce from the Civic Center farmer’s market is also amazingly fresh and delicious. I made myself a healthy and summery salad yesterday with roasted beets, spinach, tomatoes, red onion, fresh corn, cilantro, garlic, quinoa, goat cheese, and a sprinkle of hemp seeds on top. Just another curious buy from Whole Foods. Couldn’t really taste the hemp at all.I had two interviews today with another two to look forward to tomorrow. Feels good to be getting back into the groove.

It is March. How is it already March? How am I 24 when I never even felt settled being 23 yet?
When I got off work today, it was light out. And not just a fake, twilightly sort of glow. Full-on bright and sunny. I am so happy.
Acupuncture blissed me out and made me even happier.
But what made me happiest was cooking tonight. M liked every single thing I made. Sometimes it’s a tricky balance trying to figure out what he’ll like with his all-American non-ethnic food palate and my preference for healthier, non-traditional, more “exotic” foods. Spaghetti and red sauce, homemade cole slaw and garlic bread are all fan favorites though. And my chicken was a rocking success for once. And that, my friends, is a huge (and rare) win.
Time to get into Spring mode!
