Colorful and healthy five-minute lunches.

IMG_9287 IMG_9386 IMG_9355I was home for a few days during my spring break last week before we went off to Arizona and had plenty of time each morning to make myself a nice wholesome lunch.  I still somehow waited until I was starving to throw together a meal in five minutes flat.

Avocados are kind of a favorite in this household.  I’ve been eating half to one a day for probably almost two months now and I swear they’ve made my skin and hair more supply and shiny.

Food truck lunch, downtown Dallas.

There’s a conglomeration of food trucks a little less than two blocks from the Prudential office where I work in downtown Dallas.  Today was the first time I ventured out to them with a few coworkers.  They told me that there are usually a ton more, but since it is a holiday week, a few of the trucks probably took a couple of days off.There was a barbeque truck across the street sitting in the blazing sun and three others under the shade.  We went to the shady part, no contest.  Even though the trucks are only two blocks away from work, I was sweating by the time I got there. It was so hot out, I wasn’t even that hungry and only got a small bowl of gazpacho from Three Lions Truck.  They serve fish and chips and sausage rolls or some such.  Smelled super good.  The gazpacho was cool, refreshing and so fresh.  It was even a little spicy.  My coworkers got tacos from the truck next door called Tin Star and all loved theirs.

The other reason I only got gazpacho was because I was saving room for dessert from Coolhaus, a custom ice cream sandwich truck.  You pick the cookies and the ice cream middle, then it’s wrapped up for you, and you can even eat the edible wrapper.  (I think it’s made out of rice paper.)S’more cookies and sea salt caramel ice cream?  Don’t mind if I do.

It totally hit the spot and was so delicious.  I saw “chicken and waffles” cookie on the board with “candied chicken” and about barfed myself, yet was strangely intrigued.  I don’t eat meat, but would definitely try a bite of that cookie just to see what it’s all about.

I might have to go back every day at lunch and try every conceivable flavor combination.  They had a gluten-free cookie I was curious about…
