For dinner tonight, Jenn planned a special treat.
She’s been planning this meal ever since she opened one of her cookbooks a few days ago (Ellie Krieger’s The Food You Crave: Luscious Recipes for a Healthy Life). I was excited because Jenn usually shies away from making “meat” dishes since she is a vegetarian – at least most of the time. She has the occasional beef jerky relapse, but I digress.
When I got home tonight, Miaosie (my Siamese kitty) was waiting for me on the console table and Jenn was in the kitchen preparing the sloppiness.
Looks good, right?
It was good, but lacked the critical element of a sloppy joe – the sloppiness. Now the culprit here is not Jenn’s kitchen ability, but the cookbook.
The idea behind the cookbook is taking delicious foods and stripping that down to a healthy version of the original. Just a bad plan overall. Jenn protests loudly.
However, a huge win tonight was Jenn’s adaptation of this traditional dish. But it was not the dish that was a huge a success.
She swapped out ground beef for tofu and made, what she termed, “Sloppy Toes.” She was grinning ear to ear when she told me, which was really cute. She told me it’s Sloppy Toes because of the tofu. Yup, I got it babe.
Luckily, I did not have to partake in the sloppy toes.
