Lemony soy sauce noodles.

Even though there is still nothing in my refrigerator, I knew I could do better than just throwing everything into a pan and calling it a meal.

So I actually planned a real dinner for myself tonight.

Out of my measly remains of produce, I thinly sliced some napa cabbage, crushed and minced three cloves of garlic, slivered a red onion and decided to make a veggie brothy sauce.

The pot to my left was full of heating water, the pot to my right full of what was to become noodle flabor. A little soy sauce, a squeeze of lemon, honey, and a few dashes of Crystal hot sauce. All sprinkled with sesame seeds.

My garlic, red onions and cabbage went into my sauce pot, dried udon noodles went into the boiling water on my left.

The veggies cooked down and got cozy with the sauce. Mmm….Smelled like lemon teriyaki sauce.

Once the noodles were done, I shocked them in cold water, rinsed them off and dumped them into the sauce and veggie pot with a glug of sesame oil on top.

Tossed together, they made a pretty mound in my bowl. Especially with a sprinkling of nori on top.

Delicious. So easy and made totally from ingredients in the pantry.

There’s something about this particular brand of udon noodle. They are particularly bouncy and springy. Probably the best Asian noodles I’ve ever had.

M will be home in a few minutes. Yay! He can help me carry groceries and I won’t be a starving orphan anymore!
