M’s sister, Rey, stayed with us last night and I cooked Thai curries for us all – a chicken version for M and Rey, and a veggie squash version for me. It was delicious. I thought she was leaving for Fremont this afternoon, but turns out she decided to stay another night.
Fine by me since she’s pretty awesome, but that did throw a wrench into my dinner plans.
I was going to just heat up the curry left over from yesterday for both M and I, make some sort of vegetable for the side and call it a day. There was no way the leftovers were going to feed three though.
Thankfully, we have plenty of produce from our Farmer Market’s trip on Sunday so it was easy to throw a few things together. I even decided to sacrifice my cute little red saucer bell pepper.
Cut into strips, I roasted the peppers along with another pan of corn and the yellow squashes I took home Friday from my CEO’s backyard.
I quickly chopped up a few tomatoes and assembled a caprese salad. These tomatoes from the market are spectacular. So juicy and flavorful. I love the pairing of basil and mozzarella with these tomatoes.
Food for three. I toasted up a few slices of wheat bread to sop up my curry because there wasn’t enough rice, and M did pop open the lids of the curry pots looking for more, but I think we all had enough.
Then we all ate the Specialty’s cookies M brought home. One milk chocolate and one oatmeal raisin. So good. It was Rey’s first time having a Specialty’s and she definitely said they were the best cookies she had.
